Meanwhile…roughly cut the lemons and boil in a covered pan for 45 minutes…Strain the liquid into a preserving pan…add the cucumber (washed and drained) and cook for 15 minutes…Next add the sugar…and finish the cooking rapidly in an open pan…Usual time 15 to 20 minutes after adding the sugar…

Pinch of cayenne pepper

Cucumber medium cucumbers…thinly sliced
1 medium sweet onion…sliced thin and separated into rings
1 cup white vinegar
1/4 cup vegetable oil
1 cup water
1/4 cup sugar…or more to taste (or diet sweetener)

The cucumbers may be scored or part of the skin can be peeled for better absorption of the juice

Layer cucumbers with the onion in a large bowl…In a separate bowl…mix remaining ingredients…stirring until sugar has dissolved…

Taste and adjust sugar for sweetness…adding more sugar…if needed…Pour over vegetables and toss lightly…

Cover and chill for 2-4 hours before serving…

2 lg. Cucumbers…pared and sliced
1 med. Onion…sliced
1/2 c. cider vinegar
1/4 c. salad oil
2 tbsp. brown sugar…firmly packed
1/2 tbsp. seasoned salt
1/4 tbsp. celery seed
1/8 tbsp. pepper

Combine cucumbers and onions in a bowl…Mix together vinegar…salad oil…brown sugar…seasoned salt…celery seed…and pepper…Pour over cucumber mixture…Chill several hours or overnight… 

Third

2 cucumbers
1/2 sweet onion
4 tbsp. salad oil
1 tsp. celery salt
Salt and pepper to taste

SALAD DRESSING:

1/2 c. vinegar (white)
1/2 c. water
2 tsp. sugar

Stir until sugar dissolves…

Peel cucumbers…scratch sides with a fork (scalloped edges) and slice very thin…Peel onion and slice thin rings…Add salad dressing and chill…

Fourth

4 med. cucumbers
1 1/2 c. dairy sour cream
1 sm. clove garlic…minced
2 tbsp. salad oil
2 tsp. sugar
1 tsp. salt
1 tsp. white wine vinegar
1/2 tsp. dill weed

Pare cucumbers and slice thinly into large bowl…Stir together remaining ingredients except dill weed…pour over cucumbers and toss lightly…Sprinkle with dill weed…Cover and chill…Just before serving…toss carefully…Sliced onions may be added…8 to 10 servings… 

Fifth

2 med. cucumbers (peeled…cut lengthwise…seeds scraped out and cut in
1/4 inch slices)
1 tsp. soy sauce
1 tbsp. white vinegar or rice vinegar
1 tbsp. sugar
2 tsp. sesame oil
1/4 tsp. Tabasco
1/2 tsp. salt

Combine cucumber with all other ingredients and chill…
